What changed in this PR
Renames the companion package to @stripe/workload-identity to accommodate future cloud providers while retaining AWS support.
Changes:
- Updates package naming, documentation, and SDK guidance.
- Moves package files to the generic directory.
- Updates build targets and release tags.

Why?
The workload identities package should be given a generic name, so that future support for separate cloud providers can be added to the same package, reducing adoption friction of package discovery
